Director of Performance Nutrition

UCF Athletics at the University of Central Florida, an NCAA Division I institution and Big XII Conference member, is seeking applications for the position of Director of Performance Nutrition.

Under the direction of the Deputy A.D., Knights Leadership Academy / SWA, the selected candidate is responsible for the administration, organization, and supervision of a progressive performance nutrition department and oversees meal operations / catering that supports the dietary and hydration needs of 16 NCAA Division I sports and 450+ student-athletes within UCF, Conference, and NCAA rules and regulations.

Responsibilities include, but are not limited to: 

  • Research of best practices/protocols in the operation of a full-service training table and multiple fueling stations located on/off campus, as well as oversight of the daily menu/catering available to constituents in terms of quantity and quality of food;
  • Research and collaboration with internal and campus entities in the continuing education and counsel of student-athletes on optimal nutrition and hydration practices to support health and performance;
  • Research and educate / counsel coaches / student-athletes regarding appropriate legal / NCAA compliant use of dietary supplements, herbal supplements, and performance-enhancing substances, to include regular evaluation of NCAA compliant products to be available / consumed by student-athletes, as well as the identification of restricted and banned substances in compliance with governing sport bodies (e.g. NCAA, WADA, US anti-doping agency);  
  • Collaboration with coaching staffs and sports performance coaches in the analysis of energy needs / utilization related to each sport and the development of individualized nutrition plans (including fueling stations) to assist student-athletes in achieving their dietary goals / objectives; 
  • Collaboration with sports medicine staff in medical nutrition therapy to assist with the management / treatment of medical conditions / diseases (sport and non-sport related);
  • Collaboration with sports performance and sports medicine staffs in the assessment and analytics related to body composition as a tool to track progress and re-evaluate nutrition interventions;
  • Collaboration with the sports medicine team in the education and in-patient / out-patient programming for medical and psychological conditions related to body image and eating disorders;   
  • Oversight of meal card program and reporting of meal frequency and attendance of student-athletes related to their nutritional needs; 
  • Relationship management with food providers and related vendors, ensuring that student-athletes are getting adequate nutritional ingredients / products (food, fluid, supplements) maximizing health and wellness, to include the development of a menu labeling system providing a complete nutritional analysis of each food item served; and
  • Oversight of the sports nutrition budget, including procurement and payment for all nutritional supplements, student support, and the stocking/inventory/organization/cleaning of fueling stations.

Due to the constituents it serves, position often requires work on evenings and weekends, in addition to potential travel as needed.

Minimum qualifications: Master's degree in an appropriate area of specialization and two (2) years appropriate experience; or a bachelor's degree in an appropriate area of specialization and four (4) years of appropriate experience. Accreditation as a Registered Dietitian (RD) through the Commission on Dietetic Registration and license / certification eligible in the State of Florida (ANSI-Conference for Food Protection) required.  Prefer minimum two (2) years nutrition experience working with sports teams and Board Certified Specialist in Sports Dietetics (CSSD).  Strong attention to detail and communication (written/verbal) skills also preferred.
